I have been on kind of a waffling kick lately. I started off with just regular waffles and they were so quick, surprisingly easy to make that I decided to try making waffles out of other ingredients. I experimented and came up with coconut sweet potato waffles. Now I have chocolate waffles. These are still pillowy and soft with nice crispy edges and have a subtle chocolate flavor which is not too overpowering.
1 1/2 flour ( I use unbleached or whole wheat)
1/2 cup cocoa powder
2 tbsp. flax seed (optional: you don’t even notice it is in there but you can get some added nutrition)
1 3/4 cup milk (**thought you could bump up the chocolate flavor if you used chocolate milk here)
1 snack size cup of apple sauce (I use this in place of oil)
2 tbsp stevia baking blend or granulated sugar
4 tsps. baking powder
1/4 tsp salt
Beat eggs until fluffy. Add all other ingredients. Mix until well combined. Add batter to iron per waffle iron direction. Bake about 5 minutes
Top with chocolate chips, strawberries or powdered sugar if desired.
