Had some left over sweet potato soufflé I needed to use up, but this can be made with plain old roasted sweet potato’s. These are not very sweet on their own, but a little maple syrup adds just the right amount of sweetness. These are also nice paired applesauce or with some roasted chicken!
1 cup sweet potato puree or left over Thanksgiving sweet potato soufflé
1/2 cup coconut flour
1/4 cup unsweetened shredded coconut
1/2 tsp cinnamon
If you feel you would like to sweeten these up more feel free to add a tbsp. of sugar
Mix all ingredients then pour into a hot waffle iron.
