Just to recap we are cooking along with a recipe for Creamy Butternut Squash and Apple Soup. The butternut squash came out of the oven all soft and bright orange. The garlic smells wonderful. The next step said to sauté 1/2 chopped onion with the remaining cloves of garlic. I used 2 more cloves. I also continued to use coconut oil in place of olive oil to sauté the onions. I used a ceramic Dutch oven I thought would do the job nicely.
The nutmeg was also added in this step. I had fresh nutmeg from the nut, so I graded some right into the pot. Not too specific with the measuring here. The smell of onions and nutmeg doesn’t seem like it would smell great, but it smells amazing! Finally I added the apples then I added 1 cup of water. I had no vegetable cubes so I omitted that and just went straight water. Also my apples were really small so I added 4 instead of 3. I used what I had left over in my fridge, 2 Granny Smith and 2 Gala .I hope the tartness of the Granny Smith doesn’t throw off the recipe? Anyhow, everything is simmering away waiting for the next step.
