Today I am doing the cook along a little differently. I will post each step as I complete it. (In case you want to join in.) The recipe we are cooking today is Creamy Butternut Squash and Apple Soup. I want to thank Mindful & Fresh for this recipe. For the first part of this recipe I went ahead and chopped up my butternut squash. It is funny to me how I am always fooled by butternut squash. Even when it seems like a small on it always yields much more than I expect.
I placed it in a pan with 4 chopped small cloves of fresh garlic and some salt and pepper. The recipe calls for 3 but mine were small and I like roasted garlic so I added an extra. I also switched out the olive oil for coconut oil, for reasons I will get to later. (I kind of messed up my shopping list.) Now is just roasting away while I prep the next step.
