Ok, I have Robert’s Ma’s Meatloaf in the oven right now. Thought I would get home quicker from a Labor Day BBQ so I could make it up earlier. Sorry about the time delay. However, the recipe came together really quickly. All the ingredients went in to one bowl so it was very little muss and hardly any fuss. The hardest part was chopping the onions and peppers. I was rushing so I used a bit more then the 1/3 amount called for in the recipe. Who doesn’t need a few extra veggies anyhow.
The other issue I had was that my hubby misunderstood and got the wrong sausage. He purchased an Asiago cheese and spinach chicken sausage that was more like a hot dog then one that was crumbly and Jimmy Dean like. I didn’t have anything else so I went with it.
As is my way, I got to use up some items that have been lying around in my pantry for sometime. I had several sleeves of saltines left from hurricane preparations. (The hurricane that never was.) I also had about a third of a bottle of BBQ sauce that was not enough for anything but to much to throw out in good conscience. And of course I had those end of the loaf slices of bread that I am always trying to find new ways to use.
Just took it out of the oven and it is delicious! The sauce is totally what makes it. Do not skimp on the sauce people! Even with my weird chicken sausage addition it works. It is moist, flavorful and really yummy.
