In between overdoing it


This is probably one of the easiest dinners I have made. I have a thing about wasting food and this  also uses up the ends of the bread loaf that nobody wants to eat. It is also very inexpensive. You can change up the seasoning as you like and even add a bit of hot sauce for a spicy kick. It starts with homemade breadcrumbs.

4-5 slices of stale-ish bread. (Can use old rolls, ends of the loaf, I have even used stale potato chips, and oat cereal.)

3-4 skinless chicken breads cut into strips

1/2 cup mustard. My kids like honey mustard but can use whatever kind you prefer.(I had left over yellow mustard from a party sub order.)

Italian, Cajun, Herbs De Province or whatever seasoning mix floats your boat.

Salt and Pepper to taste

Tear stale bread and place it in food processor with seasoning, salt and pepper. Pulse until it becomes small crumbs.

Set oven to 350. Place mustard in shallow bowl, dump the breadcrumbs on a large plate. Take chicken strips and pat then dry with a paper towel. Then using a brush or the back of a spoon spread mustard over the chicken. Finally, dredge chicken in homemade breadcrumbs shaking off the excess.                                 wpid-20150817_180502.jpg

Place chicken on sheet pan sprayed with cooking spray. To make the tenders crispier without the added fat, spray the tops with cooking spray before baking. Bake for 15-20 minutes depending on size of your tenders.
